  • 3 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon apple cider vinegar
  • 1/4 teaspoon red pepper flakes (optional for spice)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, toss the diced sweet potatoes with olive oil, salt, and black pepper. Spread them evenly on the prepared baking sheet.
  3. Roast the sweet potatoes in the oven for 20 minutes, until they start to soften.
  4. Meanwhile, in a skillet over medium heat, cook the sausage until browned and cooked through, about 8-10 minutes. Remove and set aside.
  5. In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Stir in the honey, soy sauce, apple cider vinegar, and red pepper flakes, then simmer for 2-3 minutes until slightly thickened.
  6. Remove the sweet potatoes from the oven and add them to the skillet with the sausage, tossing everything together to coat with the honey garlic sauce.
  7. Transfer the mixture back to the baking sheet and roast for an additional 10 minutes to allow the flavors to meld and caramelize.
