Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, toss the diced sweet potatoes with olive oil, salt, and black pepper. Spread them evenly on the prepared baking sheet.
- Roast the sweet potatoes in the oven for 20 minutes, until they start to soften.
- Meanwhile, in a skillet over medium heat, cook the sausage until browned and cooked through, about 8-10 minutes. Remove and set aside.
- In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Stir in the honey, soy sauce, apple cider vinegar, and red pepper flakes, then simmer for 2-3 minutes until slightly thickened.
- Remove the sweet potatoes from the oven and add them to the skillet with the sausage, tossing everything together to coat with the honey garlic sauce.
- Transfer the mixture back to the baking sheet and roast for an additional 10 minutes to allow the flavors to meld and caramelize.
