Total Time:45 minutes
Yield:4 servings
Ingredients
1 pound boneless, skinless chicken thighs
1/2 cup cornstarch
1/4 cup all-purpose flour
1 teaspoon salt
1 teaspoon black pepper
1 tablespoon sesame oil
1/3 cup soy sauce
1/4 cup gochujang (Korean chili paste)
2 tablespoons honey
2 cloves garlic, minced
1 tablespoon ginger, grated
2 tablespoons rice vinegar
2 cups cooked jasmine rice
1 cup shredded carrots
1/2 cup sliced green onions
1 tablespoon sesame seeds
Instructions
Begin by cutting the chicken thighs into bite-sized pieces. Set them aside while you prepare the coating mixture.
In a bowl, combine the cornstarch, flour, salt, and pepper. Coat the chicken pieces thoroughly in the mixture, ensuring each piece is well-covered.
Heat a large skillet over medium-high heat and add the sesame oil. Once hot, fry the chicken pieces until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels.
In the same skillet, whisk together the soy sauce, gochujang, honey, garlic, ginger, and rice vinegar. Bring to a simmer and let it cook for about 3-4 minutes until slightly thickened.
Return the chicken to the skillet, tossing it in the sauce until evenly coated. Cook for another 2 minutes, allowing the chicken to soak up all that spicy goodness.
To assemble the bowls, start with a generous scoop of jasmine rice, followed by the spicy chicken. Top with shredded carrots, green onions, and a sprinkle of sesame seeds.
