Ingredients
- 1 pound ground pork
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1/2 teaspoon cumin
- Salt and pepper to taste
- 2 large sweet potatoes, peeled and cubed
- 1/4 cup milk
- 2 tablespoons butter
- 1/4 cup maple syrup
- 2 tablespoons bourbon
- 1 tablespoon brown sugar
- Fresh parsley for garnish
Feel free to substitute ground turkey if you’d prefer a lighter option or swap the bourbon with apple juice if you’re looking for a non-alcoholic version of the drizzle.
Instructions
- Preheat your oven to 375°F. Line a baking sheet with parchment paper.
- In a large bowl, combine the ground pork, breadcrumbs, Parmesan cheese, egg, garlic, smoked paprika, cumin, salt, and pepper. Mix until just combined.
- Form the mixture into 1-inch meatballs and place them on the prepared baking sheet.
- Bake the meatballs for 20-25 minutes, or until they are golden brown and cooked through.
- While the meatballs are baking, bring a pot of salted water to a boil. Add the cubed sweet potatoes and cook until tender, about 15 minutes.
- Drain the sweet potatoes and return them to the pot. Add milk and butter, then mash until smooth. Season with salt and pepper to taste.
- In a small saucepan over medium heat, combine the maple syrup, bourbon, and brown sugar. Simmer for 5 minutes, stirring occasionally, until slightly thickened.
- To serve, spoon the sweet potato mash onto a plate, top with pork meatballs, and drizzle with the bourbon-maple sauce. Garnish with fresh parsley.
One of my favorite memories is from the first time I made this recipe for my family. The scent of bourbon and maple wafting through the kitchen brought everyone in, eagerly waiting for the first taste. Needless to say, it was a hit!
