Learn how to make delicious Seafood Skillet Dinner. Easy recipe with step-by-step instructions.

  • Total Time: 45 minutes
  • Yield: 4 servings

Ingredients

  • 1 pound of mixed seafood (shrimp, scallops, and mussels are my go-to)
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup white wine (or chicken broth for a non-alcoholic version)
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 1/4 cup fresh parsley, chopped
  • Lemon wedges, for serving

Instructions

  1. Begin by heating the olive oil in a large skillet over medium heat. The sizzle of the oil always reminds me of the excitement of starting a new culinary adventure.
  2. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the garlic, allowing it to infuse the oil with its rich aroma, a trick I learned from my abuela’s endless patience with her simmering pots.
  3. Add the cherry tomatoes and cook until they start to soften, releasing their juices, about 3 minutes.
  4. Pour in the white wine (or chicken broth) and bring to a simmer, scraping up any browned bits from the bottom of the skillet for extra flavor.
  5. Sprinkle in the smoked paprika and oregano, stirring to combine. Season with salt and pepper to your taste.
  6. Add the mixed seafood to the skillet, nestling them into the sauce. Cover and cook until the seafood is just cooked through and the mussels open, about 5-7 minutes.
  7. Finish with a generous sprinkle of fresh parsley and a squeeze of lemon juice to brighten the dish.
  8. Serve immediately, garnished with additional parsley and lemon wedges on the side. The vibrant colors and fresh flavors are sure to make this a family favorite.
