Ingredients

  • 1 cup long-grain white rice
  • 2 cups chicken or vegetable broth
  • 1 pound large shrimp, peeled and deveined
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped
  • Juice of 1 lemon
  • Optional: Red pepper flakes for a bit of heat

Instructions

  1. Rinse the rice under cold water until the water runs clear. This step is crucial to remove excess starch and achieve fluffy rice.
  2. In a medium saucepan, bring the chicken or vegetable broth to a boil. Add the rinsed rice, reduce the heat to low, cover, and let it simmer for about 15-18 minutes, or until the rice is tender and the liquid is absorbed.
  3. While the rice cooks, heat the olive oil in a large skillet over medium heat. Add the shrimp, season with smoked paprika, salt, and pepper, and cook for 2-3 minutes on each side until pink and opaque. Remove the shrimp from the skillet and set aside.
  4. In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, ensuring not to burn the garlic.
  5. Return the shrimp to the skillet, toss to coat with the garlic butter sauce, and sprinkle with fresh parsley and a squeeze of lemon juice. Stir to combine.
