Ingredients
1 cup long-grain white rice
2 cups chicken broth
1 tablespoon olive oil
1/2 pound smoked sausage, sliced
1/2 pound medium shrimp, peeled and deveined
1 onion, finely chopped
1 green bell pepper, diced
2 cloves garlic, minced
1 teaspoon Cajun seasoning
1/2 teaspoon paprika
Salt and pepper to taste
2 green onions, sliced
Instructions
Begin by rinsing the rice under cold water until the water runs clear. This step ensures that your rice will be fluffy, not sticky.
In a medium saucepan, bring the chicken broth to a boil. Add the rice, cover, and reduce the heat to low. Cook for about 18 minutes, or until the rice is tender and the liquid is absorbed. Remove from heat and let it sit, covered, for 5 minutes.
Meanwhile, heat the olive oil in a large skillet over medium-high heat. Add the sliced sausage and cook until browned, about 5 minutes. Remove the sausage from the skillet and set aside.
In the same skillet, add the onion, bell pepper, and garlic. Sauté until the vegetables are softened, approximately 4 minutes. This was always my favorite part, the aroma reminiscent of my mother’s kitchen on busy weeknights.
Add the shrimp to the skillet, cooking until they turn pink, around 3 minutes.
Return the sausage to the skillet. Stir in the cooked rice, Cajun seasoning, and paprika. Season with salt and pepper according to your taste.
Cook while stirring for an additional 3-4 minutes, allowing the flavors to meld together.
