1 pound ground beef (or turkey for a lighter version)
2 tablespoons olive oil
1 large onion, diced
1 green bell pepper, diced
3 cloves garlic, minced
2 tablespoons tomato paste
1 cup tomato sauce
1/4 cup ketchup
2 tablespoons Worcestershire sauce
1 tablespoon brown sugar
1 teaspoon smoked paprika
Salt and pepper to taste
4 medium potatoes, sliced thinly
1 cup shredded cheddar cheese
2 tablespoons chopped fresh parsley for garnish
Instructions
In a large skillet, heat the olive oil over medium heat. Add the diced onions and bell peppers, sautéing until they begin to soften, about 5 minutes. Stir in the garlic until fragrant.
Add the ground beef, breaking it apart with a wooden spoon. Cook until browned, about 7-8 minutes. Drain excess fat if necessary.
Stir in the tomato paste, tomato sauce, ketchup, Worcestershire sauce, brown sugar, and smoked paprika. Reduce heat to low and let the mixture simmer for about 10 minutes, allowing the flavors to meld. Season with salt and pepper to taste.
While the beef mixture simmers, in a separate pan, fry the thinly sliced potatoes in a little olive oil until golden brown and crispy on the edges, about 10 minutes. This step takes me back to helping my grandmother make tortillas — it’s all about that perfect browning.
