2 pounds beef chuck roast, cut into 1-inch cubes
Salt and pepper, to taste
2 tablespoons olive oil
1 medium onion, finely chopped
3 cloves garlic, minced
8 ounces cremini mushrooms, sliced
2 cups beef broth
2 tablespoons Worcestershire sauce
1 teaspoon Dijon mustard
1 cup sour cream
2 tablespoons all-purpose flour
8 ounces egg noodles
Fresh parsley, chopped, for garnish
Instructions
Start by seasoning the beef cubes with salt and pepper. In a large skillet over medium-high heat, warm the olive oil. Add the beef in batches, searing each side until browned, about 4-5 minutes. Transfer the beef to the slow cooker.
In the same skillet, add the chopped onion and garlic. Sauté until the onion is translucent, about 3 minutes. Add the mushrooms and continue to cook until they are tender, another 4 minutes. Transfer the mixture to the slow cooker.
Pour the beef broth, Worcestershire sauce, and Dijon mustard into the slow cooker. Stir to combine all ingredients. Cover and cook on low for 6-8 hours, or until the beef is incredibly tender.
About 30 minutes before serving, whisk together the sour cream and flour in a small bowl. Stir this mixture into the slow cooker to thicken the sauce.
Cook the egg noodles according to package instructions. Serve the beef stroganoff over the noodles, garnished with fresh parsley.
