Ingredients
- 1 pound baby potatoes
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 pre-made pizza crust or homemade dough
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup marinara sauce
- 1/4 cup sliced black olives
- 1/4 cup sliced bell peppers
- Fresh basil leaves for garnish
Feel free to substitute the toppings with whatever you have on hand. Sometimes, I love adding a sprinkle of crumbled feta or a handful of arugula right before serving for an extra layer of flavor.
Instructions
- Preheat your oven to 450°F (232°C). Boil the baby potatoes in salted water until tender, about 15 minutes. Drain and let them cool slightly.
- On a greased baking sheet, place the potatoes and gently smash them with the back of a fork or a potato masher. Drizzle with olive oil and season with garlic powder, oregano, salt, and pepper.
- Bake the potatoes in the oven for 20 minutes until they are crispy and golden brown.
- While the potatoes are baking, prepare your pizza crust on a separate baking sheet. Spread a thin layer of marinara sauce over the crust.
- Once the potatoes are ready, layer them over the marinara sauce, followed by mozzarella and Parmesan cheese. Add black olives and bell peppers on top.
- Bake the pizza in the oven for an additional 10-15 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and garnish with fresh basil leaves. Slice and serve hot, enjoying the crispy, cheesy goodness.
