Instructions

  1. Begin by marinating the chicken. In a bowl, combine olive oil, lime juice, chili powder, cumin, garlic powder, onion powder, salt, and pepper. Add the chicken breasts and coat them thoroughly. Let them marinate for at least 30 minutes to soak up all those wonderful flavors.
  2. Preheat your grill to medium-high heat. Grill the chicken for about 6-7 minutes on each side or until fully cooked and slightly charred. I always use the “touch test” my abuela taught me — the chicken should feel firm to the touch.
  3. Once cooked, let the chicken rest for a few minutes before slicing it into strips. This resting time allows the juices to redistribute, keeping the chicken juicy and tender.
  4. Warm the flour tortillas slightly on the grill or in a skillet for about 30 seconds per side. This makes them more pliable and easier to roll.
