Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • 1 cup uncooked long-grain rice
  • 2 cups chicken or vegetable broth
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 1 tablespoon fresh parsley, chopped (optional)
  • Lemon wedges for serving

Instructions

  1. In a medium bowl, toss the shrimp with Cajun seasoning until well coated. Set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side until they turn pink and slightly charred. Remove from the skillet and set aside.
  3. In the same skillet, add the onion and garlic. Sauté for 2 minutes until fragrant.
  4. Add the bell peppers and continue to cook for another 3-4 minutes until they are tender.
  5. Stir in the tomato paste and smoked paprika, cooking for an additional minute.
  6. Add the rice to the skillet, stirring to coat it in the spice mixture.
  7. Pour in the broth, bringing it to a boil. Reduce heat to low, cover, and let simmer for 15-20 minutes or until the rice is cooked and liquid is absorbed.
  8. Return the shrimp to the skillet, gently folding them into the rice mixture. Cook for another 2 minutes to heat through.
  9. Season with salt and pepper to taste, and sprinkle with fresh parsley if desired. Serve with lemon wedges on the side.
