- 1 pound large shrimp, peeled and deveined
- 1 tablespoon Cajun seasoning (or homemade blend)
- 2 tablespoons olive oil
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 bell pepper, diced (any color)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh parsley, for garnish
- Lemon wedges, for serving
Feel free to substitute brown rice for a nuttier flavor or add a dash of cayenne pepper if you like it extra spicy. The beauty of cooking is in making it your own, just like my grandmother taught me all those years ago.
Instructions
- Begin by seasoning the shrimp with Cajun seasoning, ensuring each piece is well-coated. Let them marinate while you prepare the other ingredients.
- In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the shrimp and cook for about 2-3 minutes on each side until they are pink and opaque. Remove the shrimp from the skillet and set them aside.
- Add the remaining olive oil to the skillet. Sauté the diced onion, bell pepper, and garlic until the onion is translucent and the peppers are tender, about 5 minutes.
- Stir in the rice, smoked paprika, salt, and black pepper. Toast the rice for about 2 minutes, stirring frequently to prevent burning.
- Slowly pour in the chicken broth, scraping up any bits stuck to the bottom of the skillet. Bring to a simmer, then reduce the heat to low. Cover and cook for 15 minutes, or until the rice is tender and has absorbed the liquid.
- Return the cooked shrimp to the skillet, gently folding them into the rice mixture. Cook for an additional 2 minutes to heat through.
- Garnish with freshly chopped parsley and serve with lemon wedges on the side for a zesty finish.
