Ingredients
To create this flavorful dish, you’ll need a handful of simple ingredients that come together to make magic:
- 2 packs of instant ramen noodles (discard seasoning packets)
- 3 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 tablespoon sriracha (adjust to taste for spice level)
- 1 teaspoon sesame oil
- 2 cups chicken or vegetable broth
- 1/2 cup scallions, chopped
- 1/4 cup cilantro, chopped
- 1 soft-boiled egg, halved (optional)
- Sesame seeds for garnish
- Lime wedges for serving
Feel free to substitute vegetable broth for a vegetarian version, or adjust the sriracha for less heat if desired. Make it your own!
Instructions
- Begin by cooking the ramen noodles according to the package instructions. Once cooked, drain and set aside.
- In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes. This reminds me of helping my abuela stir her pots, the smell of garlic filling the kitchen.
- Stir in the soy sauce, sriracha, and sesame oil, mixing well to combine. Let this simmer for another minute.
- Add the chicken or vegetable broth to the skillet, bringing the mixture to a gentle boil.
- Once the broth is heated through, add the cooked ramen noodles, tossing them to coat well in the spicy garlic butter sauce.
- Remove from heat and stir in half of the scallions and cilantro.
- Divide the ramen between bowls, topping with the remaining scallions, cilantro, and a soft-boiled egg if using. Sprinkle with sesame seeds and serve with lime wedges on the side.
