Ingredients
1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
2 tablespoons olive oil
4 cloves garlic, minced
1 tablespoon soy sauce
1 tablespoon sriracha or your favorite hot sauce
1 teaspoon honey
1 teaspoon smoked paprika
1/2 teaspoon ground cumin
Salt and pepper to taste
1 cup cooked jasmine rice
1/4 cup chopped fresh cilantro
1 lime, cut into wedges
Optional: sliced avocado and chopped scallions for garnish
Instructions
Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté until fragrant, about 30 seconds.
Increase the heat to medium-high and add the chicken pieces. Cook until the chicken is browned and cooked through, about 7-10 minutes.
In a small bowl, mix together the soy sauce, sriracha, honey, smoked paprika, cumin, salt, and pepper.
Pour the sauce over the chicken in the skillet, stirring to coat the chicken evenly. Let it simmer for an additional 2-3 minutes until the sauce thickens slightly.
Serve the spicy garlic chicken over a bed of cooked jasmine rice. Garnish with chopped cilantro and a wedge of lime on the side.
