Learn how to make delicious Spicy Korean Beef Noodles. Easy recipe with step-by-step instructions.

  • Total Time: 45 minutes
  • Yield: 4 servings

Ingredients

  • 8 oz udon noodles (substitute rice noodles for gluten-free)
  • 1 lb beef sirloin, thinly sliced
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 1/4 cup gochujang (Korean chili paste)
  • 3 tablespoons soy sauce (use tamari for gluten-free)
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 red bell pepper, sliced
  • 1 cup mushrooms, sliced
  • 2 green onions, chopped
  • 1 tablespoon sesame seeds

Feel free to substitute chicken or tofu for the beef if you’re in the mood for something different. Cooking is all about adjusting to your preferences, much like how my abuela taught me to follow my senses in the kitchen.

Instructions

  1. Begin by cooking the udon noodles according to the package instructions. Drain and set aside.
  2. In a large pan, heat the vegetable oil over medium-high heat. Add the thinly sliced beef and cook for about 3-4 minutes until browned. Remove and set aside.
  3. In the same pan, add the garlic and ginger, sautéing for about 1 minute until fragrant.
  4. Add the gochujang, soy sauce, honey, and rice vinegar to the pan. Stir well to combine, creating a rich sauce.
  5. Toss in the red bell pepper and mushrooms, cooking for another 3-4 minutes until they begin to soften.
  6. Return the cooked beef to the pan, stirring to coat with the sauce, and continue cooking for 2 minutes.
  7. Finally, add the cooked noodles and green onions, tossing everything together until the noodles are well coated in the sauce.
  8. Sprinkle with sesame seeds before serving, for that extra touch of nutty flavor.

Remember, the most important ingredient is to cook with joy and a pinch of creativity, just like how I learned in my childhood kitchen.
