Ingredients
- 1 ½ pounds boneless, skinless chicken thighs
- 1 cup pineapple chunks (fresh or canned)
- ½ cup brown sugar
- 1 tablespoon soy sauce
- 2 cloves garlic, minced
- 1 tablespoon sriracha or your favorite hot sauce (adjust to taste)
- 1 teaspoon ground ginger
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 tablespoon lime juice
- Chopped fresh cilantro for garnish (optional)
Feel free to substitute chicken breasts if you prefer, and for a milder version, reduce the sriracha or omit it altogether.
Instructions
- In a large bowl, mix together the brown sugar, soy sauce, minced garlic, sriracha, ground ginger, salt, and pepper. Add the chicken thighs and toss to coat well. Let marinate for at least 30 minutes, or overnight in the refrigerator for deeper flavor.
- Heat the olive oil in a large skillet over medium-high heat. Add the marinated chicken, cooking each side for about 5-6 minutes, or until browned and cooked through.
- Remove the chicken from the skillet and set aside. In the same skillet, add the pineapple chunks and lime juice, stirring to scrape up any browned bits from the bottom of the pan.
- Return the chicken to the skillet, mixing it with the pineapple and cooking for another 2-3 minutes, allowing the flavors to meld together.
- Once done, garnish with fresh cilantro if desired and serve hot.
