Ingredients

  • 8 ounces of rice noodles
  • 1 pound of shrimp, peeled and deveined
  • 2 tablespoons of sesame oil
  • 3 tablespoons of soy sauce
  • 2 tablespoons of sriracha (adjust to taste)
  • 2 tablespoons of honey
  • 1 tablespoon of rice vinegar
  • 2 cloves of garlic, minced
  • 1 tablespoon of fresh ginger, grated
  • 1 red bell pepper, thinly sliced
  • 1 cup of sugar snap peas
  • 2 green onions, chopped
  • 2 tablespoons of sesame seeds, toasted
  • Salt and pepper to taste
  • Lime wedges for serving

Instructions

  1. Start by soaking the rice noodles in warm water for about 15 minutes or until they soften. Drain them well and set aside.
  2. In a small bowl, whisk together the soy sauce, sriracha, honey, rice vinegar, garlic, and ginger. This sauce will be the heart of your dish.
  3. Heat 1 tablespoon of sesame oil in a large skillet over medium-high heat. Add the shrimp, season with salt and pepper, and cook until they turn pink and opaque, about 3-4 minutes. Remove the shrimp from the skillet and set aside.
  4. In the same skillet, add another tablespoon of sesame oil. Toss in the bell pepper and sugar snap peas, stirring frequently for about 5 minutes until they are tender-crisp.
  5. Add the soaked noodles to the skillet, along with the sauce mixture. Toss everything together until the noodles are well coated and heated through, about 2-3 minutes.
  6. Return the shrimp to the skillet, tossing everything together gently. Sprinkle with green onions and toasted sesame seeds.
  7. Serve the noodles hot, with lime wedges on the side for that extra zing.
