  • 8 ounces sushi-grade tuna, finely chopped
  • 2 tablespoons mayonnaise
  • 1 tablespoon Sriracha sauce (adjust to taste)
  • 1 teaspoon soy sauce
  • 1 avocado, sliced
  • Sesame seeds, for garnish
  • Chopped green onions, for garnish
  • Vegetable oil, for frying

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear. This helps remove the excess starch, ensuring that your rice is perfectly fluffy.
  2. In a medium saucepan, combine the rinsed rice and water. Bring to a boil, then reduce the heat to low, cover, and cook for 18-20 minutes.
  3. While the rice cooks, mix the rice vinegar, sugar, and salt in a small bowl until dissolved. Gently fold this mixture into the cooked rice. Let it cool completely.
  4. Shape the cooled rice into small rectangular blocks, about 1 inch by 2 inches. These will be the crispy bases for your tuna topping.
  5. Heat vegetable oil in a large skillet over medium-high heat. Fry the rice blocks until golden brown on each side, about 2-3 minutes per side. Drain on paper towels.
  6. In a small bowl, combine the chopped tuna, mayonnaise, Sriracha, and soy sauce. Mix until well combined and adjust seasoning to taste.
  7. Top each crispy rice block with a spoonful of the spicy tuna mixture. Garnish with avocado slices, sesame seeds, and green onions.
