Ingredients
4 boneless, skinless chicken breasts
1 cup fresh spinach leaves, chopped
1/2 cup crumbled feta cheese
2 cloves garlic, minced
1 tablespoon olive oil
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1 lemon, sliced for garnish
Optional: 1/4 cup sun-dried tomatoes, chopped
Instructions
Preheat your oven to 375°F (190°C). Lightly grease a baking dish with olive oil.
Place the chicken breasts between two sheets of plastic wrap and pound them to about 1/4 inch thickness using a meat mallet.
In a small bowl, combine the spinach, feta cheese, garlic, olive oil, oregano, salt, and pepper. If desired, add the sun-dried tomatoes for extra flavor.
Spoon the spinach mixture onto each chicken breast, spreading it evenly. Roll up each chicken breast tightly and secure with toothpicks.
Place the chicken rolls seam-side down in the prepared baking dish. Drizzle with a little more olive oil and garnish with lemon slices.
Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and golden brown.
Remove the toothpicks before serving. Enjoy the rolls hot, perhaps with a fresh squeeze of lemon juice.
