Ingredients

  • 1 can (15 ounces) of black beans, drained and rinsed
  • 1 can (14.5 ounces) of diced tomatoes, drained
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese (or your favorite melting cheese)
  • Fresh cilantro for garnish

Instructions

  1. Preheat your oven to 375°F. Slice the tops off the bell peppers and remove the seeds and membranes. Arrange them upright in a baking dish.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until fragrant and soft, about 3 minutes.
  3. Add the ground beef (or turkey) to the skillet, breaking it up with a wooden spoon. Cook until browned, about 5-7 minutes. Drain any excess fat.
  4. Stir in the cooked rice, black beans, diced tomatoes, cumin, smoked paprika, salt, and pepper. Allow the mixture to simmer for another 5 minutes, letting the flavors meld together.
  5. Spoon the filling generously into each bell pepper. Top with shredded cheese.
  6. Cover the dish with foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 10 minutes, or until the peppers are tender and the cheese is bubbly and golden.
