Total Time:45 minutes
Yield:4 servings
Ingredients
1 pound boneless chicken thighs, trimmed
2 tablespoons olive oil
1 teaspoon smoked paprika
1 teaspoon garlic powder
1/2 teaspoon cayenne pepper
1 lime, juiced
1 tablespoon honey
2 cups fresh mixed greens (such as arugula and spinach)
1/2 cup cherry tomatoes, halved
1/4 cup red onion, thinly sliced
1/2 avocado, sliced
1/4 cup crumbled feta cheese
Salt and pepper, to taste
Instructions
Preheat your grill to medium-high heat. I remember my father always saying, “A good grill is the start of a great meal,” and he was right.
In a small bowl, mix together olive oil, smoked paprika, garlic powder, cayenne pepper, lime juice, honey, salt, and pepper. This marinade is a family favorite—it’s simple but adds so much flavor.
Place the chicken thighs in a resealable plastic bag and pour the marinade over them. Seal the bag and massage the marinade into the chicken, ensuring each piece is well coated. Let it marinate for at least 30 minutes, or up to 2 hours for deeper flavor.
Once marinated, place the chicken on the grill. Cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F. The smell of grilled chicken always takes me back to those summer evenings in our backyard.
While the chicken is grilling, prepare the salad. In a large bowl, combine mixed greens, cherry tomatoes, red onion, and avocado.
Once the chicken is cooked, let it rest for a few minutes before slicing it into thin strips.
Toss the salad with the grilled chicken slices and sprinkle with crumbled feta cheese. Drizzle any remaining marinade over the salad for an extra kick of flavor.
