1.5 pounds of boneless, skinless chicken thighs
1 cup of sweet chili sauce

1 tablespoon of rice vinegar
2 cloves of garlic, minced
1 teaspoon of ginger, grated
1 tablespoon of olive oil
1 red bell pepper, sliced
1 green bell pepper, sliced
1 bunch of green onions, chopped
Cooked jasmine rice, for serving
Sesame seeds, for garnish
Instructions
Begin by marinating the chicken. In a large bowl, combine the sweet chili sauce, soy sauce, rice vinegar, garlic, and ginger. Add the chicken thighs and toss to coat. Cover and refrigerate for at least 30 minutes, or up to overnight for more flavor.
Preheat your oven to 375°F. Line a baking sheet with aluminum foil or parchment paper for easy cleanup.
