Ingredients
- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup whole milk
- 2 large eggs
- 1/2 cup unsalted butter, melted
- 1/4 cup honey
If you’re looking for substitutions, you can use almond milk instead of whole milk, or swap the honey for maple syrup for a different kind of sweetness.
Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or lightly grease with cooking spray.
- In a large mixing bowl, combine the cornmeal, flour, sugar, baking powder, and salt. Stir until well mixed.
- In a separate bowl, whisk together the milk, eggs, melted butter, and honey until smooth.
- Pour the wet ingredients into the dry ingredients, stirring just until combined. Be careful not to overmix, as this can make the muffins tough.
- Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
- Bake in the preheated oven for 15-18 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
