- 1 pound steak, cut into 1-inch cubes
- 2 large sweet potatoes, peeled and diced
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- Salt and pepper to taste
- 1/2 cup chopped fresh cilantro (optional)
- 1 lime, cut into wedges (for serving)
Feel free to substitute the steak with chicken or tofu if you’re exploring a lighter or vegetarian option. The sweet potatoes can also be replaced with regular potatoes if you prefer a different texture.
Instructions
- Preheat your oven to 400°F (200°C). Grease a large baking dish with a bit of olive oil.
- In a large bowl, combine the steak cubes, sweet potatoes, olive oil, garlic, smoked paprika, cumin, salt, and pepper. Toss until everything is evenly coated.
- Transfer the mixture into the prepared baking dish, spreading it out in an even layer.
- Bake in the preheated oven for 30-35 minutes, or until the sweet potatoes are tender and the steak is cooked to your liking. Stir halfway through to ensure even cooking.
- Once baked, remove from the oven and sprinkle fresh cilantro on top, if desired.
- Serve hot with lime wedges on the side for a burst of citrusy freshness.
