Ingredients

Instructions

  1. Begin by heating the olive oil in a large skillet over medium heat. Add the diced onions and bell peppers, and sauté until they become soft and translucent, about 5 minutes.
  2. Add the minced garlic and cook for another minute until fragrant. This step always reminds me of my grandmother’s kitchen, where garlic was the backbone of many dishes.
  3. Add the diced sweet potatoes to the skillet. Stir in the smoked paprika, cumin, salt, and pepper. Toss everything together to ensure the sweet potatoes are well coated with the spices.
