- 2 large sweet potatoes, washed and sliced into 1/4-inch rounds

Feel free to substitute the feta with goat cheese if you prefer a milder taste or add a sprinkle of smoked paprika for an extra layer of flavor.
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a large bowl, toss the sweet potato rounds with olive oil, sea salt, black pepper, and garlic powder until evenly coated.
- Arrange the sweet potato slices in a single layer on the prepared baking sheet. Bake for 20-25 minutes, or until they are tender and slightly crispy on the edges.
- While the sweet potatoes are baking, mix the crumbled feta cheese, chopped parsley, and lemon juice in a small bowl. If you like a bit of spice, add the red pepper flakes.
- Once the sweet potatoes are done, remove them from the oven and let them cool for a few minutes. Top each round with a generous spoonful of the feta mixture.
- Return to the oven and bake for an additional 5-7 minutes, just until the cheese is slightly melted and warmed through.
