Ingredients

  • 1.5 pounds of sirloin steak, cut into 1-inch cubes
  • 2 large sweet potatoes, peeled and diced into 1-inch cubes
  • 3 tablespoons olive oil, divided
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (optional for a bit of heat)
  • Salt and pepper to taste
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 red onion, sliced
  • 2 tablespoons balsamic vinegar

If you’re missing any of these ingredients, don’t worry! You can easily swap the steak for chicken or tofu and use any fresh herbs you have on hand.

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the sweet potatoes with 2 tablespoons of olive oil, garlic powder, paprika, cayenne pepper, salt, and pepper. Toss until the sweet potatoes are evenly coated.
  3. Spread the sweet potatoes in an even layer on the prepared baking sheet and bake for 20 minutes.
  4. While the sweet potatoes are baking, season the steak cubes with salt, pepper, rosemary, and thyme.
  5. Heat the remaining tablespoon of olive oil in a large skillet over medium-high heat. Add the steak cubes and sear them for about 2-3 minutes on each side until they are browned but not fully cooked through.
  6. Remove the skillet from heat and drizzle the balsamic vinegar over the steak, giving it a quick toss to coat the cubes.
  7. After the sweet potatoes have baked for 20 minutes, remove them from the oven and add the steak cubes and sliced red onion to the baking sheet. Mix everything gently to combine.
  8. Return the baking sheet to the oven and bake for an additional 10-15 minutes, or until the steak is cooked to your desired level of doneness and the sweet potatoes are tender.
  9. Remove from the oven and let it rest for a few minutes before serving. Enjoy the explosion of flavors with every bite!
