  • 1/2 cup breadcrumbs (use gluten-free if needed)
  • 1/4 cup milk
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 egg, beaten
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a loaf pan.
  2. In a skillet, cook the chopped bacon over medium heat until crispy. Remove and place on paper towels to drain excess grease.
  3. In the same skillet, add the chopped onions and garlic, sautéing until translucent. Add the mushrooms and cook until they release their moisture and are browned.
  4. In a large mixing bowl, combine the ground beef, bacon, mushrooms, Swiss cheese, breadcrumbs, milk, egg, Worcestershire sauce, salt, and pepper. Mix gently until all ingredients are just combined. Avoid over-mixing to keep the meatloaf tender.
  5. Transfer the mixture into the prepared loaf pan, pressing gently to form a loaf shape.
  6. Bake in the preheated oven for about 45-50 minutes, or until the internal temperature reaches 160°F (71°C).
  7. Once done, let the meatloaf rest for 10 minutes before slicing. This rest period helps the juices redistribute for a moist, flavorful slice.
