Ingredients
1 pound ground beef
1 packet taco seasoning mix
1/4 cup water
1 cup shredded cheddar cheese
1 cup crushed tortilla chips
1/2 cup ranch dressing
1/4 cup chopped fresh cilantro
1/4 cup finely chopped onions
1 tablespoon olive oil
1 cup sour cream (optional, for serving)
Instructions
Preheat your oven to 375°F (190°C) and lightly grease a baking sheet with olive oil.
Heat a large skillet over medium heat, then add the ground beef and cook until browned, about 5-7 minutes. Drain excess fat.
Add the taco seasoning and water to the skillet, stirring well to combine. Let it simmer for about 2 minutes until the mixture thickens.
In a large mixing bowl, combine the cooked beef, cheddar cheese, crushed tortilla chips, ranch dressing, cilantro, and onions. Mix until all ingredients are well incorporated.
Scoop about a tablespoon of the mixture and form it into a bite-sized ball, placing it on the prepared baking sheet. Repeat with the remaining mixture.
Bake in the preheated oven for 10-12 minutes until the cheese is melted and the tops are slightly golden.
Remove from the oven and let them cool slightly before serving. Serve with a side of sour cream for dipping if desired.
