Ingredients
Gathering your ingredients is the first step to bringing this dish to life. Here’s what you’ll need:
- 3 large sweet onions, thinly sliced
- 1 tablespoon olive oil
- 2 cups shredded sharp cheddar cheese
- 1/2 cup heavy cream
- 1/2 cup breadcrumbs (panko or regular)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional, for a bit of heat)
- 2 tablespoons butter, melted
If you’re in a pinch, feel free to substitute gruyere for cheddar or use half-and-half instead of heavy cream. The goal is to create a dish that’s both satisfying and adaptable to what you have on hand.
Instructions
Here’s how you can make this delicious dish right in your own kitchen:
- Preheat your oven to 375°F (190°C). Lightly grease a baking dish and set it aside.
- In a large skillet, heat olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until they become soft and caramelized, about 15-20 minutes. My abuela always said patience is key when caramelizing onions, and she was right!
- Transfer the caramelized onions to the prepared baking dish. Evenly sprinkle the shredded cheddar cheese over the onions.
- In a small bowl, whisk together the heavy cream, salt, black pepper, and cayenne pepper. Pour this mixture over the onions and cheese in the baking dish.
- In another bowl, combine the breadcrumbs with melted butter, stirring until the breadcrumbs are evenly coated. Sprinkle this mixture over the top of the onions and cheese.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the cheese is bubbly.
- Allow to cool for a few minutes before serving. Enjoy how the flavors meld together, much like the family stories shared around my childhood table.
