- 16 oz cheese tortellini
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, thinly sliced
- 1 cup cucumber, diced

- 1/2 cup salami, sliced into strips (optional)
- 1/4 cup parmesan cheese, grated
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano

Instructions
Let’s bring this dish to life with these simple steps:
- Start by cooking the tortellini according to the package instructions. Once cooked, drain and rinse under cold water to stop the cooking process. Set aside.
- In a large bowl, combine the cherry tomatoes, red onion, cucumber, black olives, pepperoncini, and salami if you’re using it.
- Add the cooled tortellini to the bowl of veggies, and toss gently to combine.
- In a small bowl, whisk together the olive oil, red wine vinegar, and oregano. Season with salt and pepper to taste.
- Pour the dressing over the tortellini and vegetables, and toss everything together to ensure even coating.
- Sprinkle the parmesan cheese over the top before serving.
- For best flavor, let the salad sit for at least 15 minutes before serving to allow the flavors to meld.
