  • 1 cup creamy peanut butter
  • 1/4 cup soy sauce (or tamari for a gluten-free option)
  • 2 tablespoons lime juice
  • 1 tablespoon honey (or maple syrup for a vegan option)
  • 1 tablespoon sesame oil
  • 1 teaspoon sriracha (adjust to taste)
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 cup shredded carrots
  • 1 red bell pepper, thinly sliced
  • 1/4 cup chopped cilantro
  • 1/2 cup roasted peanuts, roughly chopped
  • 2 scallions, sliced
  • Optional: grilled chicken or tofu for added protein

Instructions

  1. Start by soaking the rice noodles in warm water for about 10 minutes until they’re pliable but not fully cooked. Drain and set aside.
  2. In a medium saucepan over low heat, combine peanut butter, soy sauce, lime juice, honey, sesame oil, sriracha, garlic, and ginger. Stir continuously until the ingredients are well blended and the sauce is smooth, about 5 minutes.
  3. In a large skillet, heat a drizzle of sesame oil over medium heat. Add the carrots and red bell pepper, sautéing until just tender, about 3-4 minutes.
  4. Add the drained noodles to the skillet, followed by the peanut sauce. Toss everything together until the noodles are well coated and the dish is heated through, about 5 minutes.
  5. Transfer the noodles to serving plates and garnish with cilantro, roasted peanuts, and scallions. If you’re using grilled chicken or tofu, add it on top for an extra protein boost.
