Total Time:45 minutes
Yield:4 servings
Ingredients
1 cup all-purpose flour
1/2 cup granulated sugar
1/2 cup unsalted butter, melted
1/4 teaspoon salt
1/2 teaspoon baking powder
1 package (8 oz) cream cheese, softened
1/4 cup sour cream
1/4 cup granulated sugar (for cheesecake layer)
1 large egg
1 teaspoon vanilla extract
1 cup diced mango
1 cup diced pineapple
3 tablespoons passion fruit pulp
1/4 cup shredded coconut (optional for topping)
Instructions
Preheat your oven to 350°F (175°C) and grease a 9-inch springform pan. This will ensure your cake releases easily after baking.
In a medium bowl, combine flour, 1/2 cup sugar, melted butter, salt, and baking powder. Stir until the mixture resembles coarse crumbs. Set aside 1/2 cup of this mixture for the topping.
Press the remaining crumb mixture firmly into the bottom of the prepared pan to form the base. Bake for 10 minutes, then remove from the oven and let cool slightly.
In a large mixing bowl, beat cream cheese, sour cream, and 1/4 cup sugar until smooth and creamy. Add the egg and vanilla extract, mixing until fully incorporated.
Fold in the diced mango, pineapple, and passion fruit pulp. Pour this cheesecake mixture over the slightly cooled crust.
Sprinkle the reserved crumb mixture evenly over the cheesecake layer, followed by the shredded coconut if using. This adds a delightful crunch and extra flavor.
Bake in the preheated oven for 35-40 minutes, or until the edges are set and the center slightly jiggles. This ensures the cheesecake will be creamy and not overbaked.
Allow the cake to cool to room temperature, then refrigerate for at least 2 hours before serving. This chilling time helps the flavors meld together beautifully.
