- 2 medium acorn squashes, halved and seeded
- 1 pound ground turkey
- 1 onion, finely chopped

Instructions
- Preheat your oven to 400°F (200°C). While the oven heats, place the acorn squash halves cut-side up on a baking sheet. Drizzle them with olive oil and sprinkle with salt and pepper. Roast in the oven for about 25-30 minutes or until tender.
- In a large skillet over medium heat, add a tablespoon of olive oil. Sauté the onion and garlic until fragrant and translucent, about 3-4 minutes. Add the bell pepper and cook for another 2 minutes.
- Add the ground turkey to the skillet, breaking it up with a spoon. Cook until browned and cooked through, about 7-8 minutes.
- Stir in the cooked quinoa, cumin, paprika, cinnamon, salt, and pepper. Mix well to ensure the spices are evenly distributed. Taste and adjust seasoning if necessary.
- Once the squash is done roasting, remove it from the oven and fill each half with the turkey mixture. Top with shredded cheese if desired.
- Return the stuffed squashes to the oven and bake for another 10-15 minutes, or until the cheese is melted and bubbly.
