Learn how to make delicious Turtle Chocolate Caramel Cheesecake Bites. Easy recipe with step-by-step instructions.

  • Total Time: 45 minutes
  • Yield: 4 servings

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup caramel sauce
  • 1/2 cup chopped pecans
  • Pinch of salt

Feel free to substitute the pecans with walnuts if you prefer, and dark chocolate chips can be used for a richer flavor. This flexibility is one of the things I love about creating desserts that evoke the warmth of my family kitchen.

Instructions

  1. Preheat your oven to 325°F and line a 9×13-inch baking dish with parchment paper, allowing some overhang for easy removal.
  2. In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture firmly into the bottom of your prepared dish to create a crust.
  3. In a large mixing bowl, beat the cream cheese and sugar together until smooth and creamy, about 3-4 minutes.
  4. Add the vanilla extract and eggs, one at a time, beating well after each addition until fully incorporated.
  5. Pour the cream cheese mixture over the crust and spread evenly.
  6. Sprinkle the chocolate chips and pecans evenly over the top.
  7. Drizzle the caramel sauce over the chocolate and pecans, using a spatula to gently swirl it into the cream cheese mixture for a marbled effect.
  8. Bake for 35-40 minutes, or until the center is set and the edges are lightly golden.
  9. Remove from the oven and let it cool completely in the pan on a wire rack.
  10. Once cooled, refrigerate for at least 2 hours before cutting into bite-sized squares.

From my experience, patience is key here. Allowing the bites to cool completely ensures they set perfectly, making them easier to slice and serve.
