Ingredients
- 1 pound ground beef
- 2 medium zucchinis, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (14.5 ounces) diced tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 cup shredded cheddar cheese (optional)

Instructions
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent, about 3-4 minutes.
- Add the ground beef to the skillet, breaking it apart with a wooden spoon. Cook until browned, about 6-8 minutes. Drain any excess fat if necessary.
- Stir in the diced tomatoes, sliced zucchinis, oregano, cumin, salt, and pepper. Cook everything together until the zucchini is tender, about 10 minutes, stirring occasionally.
- If using, sprinkle the shredded cheddar cheese over the top, and cover the skillet. Allow the cheese to melt for about 2 minutes.
