  • 2 medium zucchinis, grated

  • 1 large egg, lightly beaten
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt

  • 1 tablespoon olive oil
  • 1/2 cup marinara sauce (for serving)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Place the grated zucchini in a clean kitchen towel and squeeze out as much moisture as possible. This prevents the meatballs from becoming too soggy.
  3. In a large mixing bowl, combine the zucchini, breadcrumbs, Parmesan cheese, parsley, garlic, egg, oregano, salt, and pepper. Mix until all ingredients are well incorporated.
